Ke-5 Resep Sambal Goreng Kentang Ati Ampela
- Kentang 500 gram (Kupas, potong dadu rendam dalam air, tiriskan lalu goreng), Sisihkan.
- Ati ampela 5 pasang (cuci bersih beri air perasaan jeruk nipis, rebus hingga matang, sisihkan)
- Lengkuas 2 centi meter (geprek)
- Daun salam 2 lembar
- Sereh 1 batang (geprek)
- Daun jeruk buang tulangnya 4 lembar
- Santan kental atau air 50 mili liter
- Garam, gula, penyedap secukupny sesuai selera
- Bumbu Halus Sambal Goreng :
- Cabai merah besar 4 buah (buang bijinya)
- Cabai merah keriting 20 buah
- Bawang putih 3 siung
- Terasi 1 sendok makan
- Bawang merah 5 buah
- Petai (pete) 1 papan (jika suka)
Cara Memasak Sambal Goreng Kentang Ati :
- Langkah awal panaskan minyak, tumis semua bumbu halus, masukkan salam, lengkuas, sereh dan daun jeruk, aduk-aduk hingga bumbu matang.
- Selanjutnya masukkan santan kental atau air dan ati ampela, aduk rata. Lalu masukkan kentang, aduk hingga tercampur hingga semua bumbu merata. Masukkan garam, gula dan penyedap sesuai selera. Koreksi rasa jangan lupa ya, harus dapat rasa manis, asin dan gurihnya lalu masukkan pete.
